Kartoffelrösti mit Lachs und Meerrettichcreme

Kartoffelrösti – das ist auch mein ganz persönliches Herbst- und Wintersoulfood. Dazu etwas Lachs und eine Meerrettichcreme. Egal ob als Mittagessen, Frühstück oder Abendessen, es passt eigentlich immer und auch zu jeder Gelegenheit. Das Rezept ist für 6 Personen.

Ihr benötigt folgende Lebensmittel

  • 200g Creme Fraiche
  • Stück frischen Meerrettich
  • Salz & Pfeffer
  • 2 1/2 kg geschälte Kartoffeln
  • Butterschmalz
  • 1 kleine Knoblauchzehe
  • 1 Zwiebel
  • Prise Muskatnuss
  • 2 EL Mehl
  • 3 Eier

Wenn die Kartoffeln noch nicht geschält sind, solltet ihr dies auf jeden Fall als erstes tun. Die geschälten Kartoffeln müssen dann gerieben werden, dafür habe ich eine Maschine, ansonsten muss dies mit Hand und Reibe gemacht werden, ich weiß, eine sehr mühselige Arbeit. Füllt die geriebnen Kartoffeln in einen Topf, würzt diese mit Salz und Pfeffer. Schneidet sowohl Knoblauch als auch Zwiebel in kleine Würfel und mischt diese unter die Kartoffeln. Damit das Wasser aus den Kartoffeln geht, nehme ich immer ein Geschirrtuch, fülle dort die Masse hinein und presse die Flüssigkeit heraus. Fügt danach Muskatnuss, Mehl und die Eier hinzu. Vermengt dies gut. Die Masse wird in der Pfanne mit etwas Butterschmalz ausgebacken. Die Masse könnt ihr mit Esslöffeln portionieren.

Für die Meerrettichcreme nehmt ihr 200 Gramm Creme Fraiche und reibt ein Stück Meerrettich darunter. Würzt dieses mit Salz und Pfeffer und rührt gut um. Probiert erst nach dem Umrühren, da der Meerrettich scharf ist. Würzt gegebenenfalls noch einmal nach. Zum Lachs passt natürlich auch etwas Dill, den ihr auch unter die Creme heben könnt.

Potato Pancake – this is also my very own autumn and winter soulfood. Add some salmon and a horseradish cream. Whether for lunch, breakfast or dinner, it always fits and always on every occasion. The recipe is for 6 people.

You need the following foods

200g creme fraiche
Piece of fresh horseradish
Salt pepper
2 1/2 kg peeled potatoes
clarified butter
1 small clove of garlic
1 onion
Pinch of nutmeg
2 tablespoons flour
3 eggs

If the potatoes have not been peeled, you should definitely do it first. The peeled potatoes must then be grated, I have a machine for that, otherwise this must be done with hand and grater, I know, a very laborious job. Put the grated potatoes in a pot and season with salt and pepper. Cut both garlic and onion into small cubes and mix them with the potatoes. To get the water out of the potatoes, I always take a dishcloth, fill in the mass and squeeze out the liquid. Then add nutmeg, flour and the eggs. Mix this well. The mass is fried in the pan with a little clarified butter. You can portion the mass with tablespoons.

For the horseradish cream you take 200 grams of creme fraiche and rub a piece of horseradish underneath. Season with salt and pepper and stir well. Try after stirring, as the horseradish is spicy. If necessary, season again. To the salmon, of course, also fits some dill, you can also raise the cream.
